In Brian's search for healthier food, he came across this great blueberry and walnut parfait for breakfast that is simple to put together and tastes great. That's unless you hate blueberries...or walnuts... Or maybe even parfait...you don't hate parfait do you?
We like to use walnuts in this recipe because they are high in protein and omega-3 fatty acids. Pecans would also be a great substitute. Blueberries have the highest antioxidant properties of any fruit and Greek yoghurt is a lot healthier than regular yoghurt, not to mention that it’s a great protein delivery system! If you don't like the taste of Greek Yoghurt then feel free to use low fat vanilla yoghurt. If that doesn’t suffice, then have high fat…it’s up to you!
Arguably, the least healthy element of this is the granola so try to stick to low-sugar varieties. And use honey over sugar always.
Given that we all like our parfait different, mix up the quantities to suit your tastes! This isn't so much a recipe as it is a breakfast suggestion! If I made this according to my tastes, this post would be renamed ‘Granola with a dribble of parfait’ whereas Brian likes to omit granola completely.

Blueberry and Walnut Parfait
- One 6oz cup Greek yoghurt per person (mix with a tbsp. of honey and a 1/2 tsp. vanilla paste to taste)
- A handful of blueberries
- A handful of walnuts (crushed!)
- A handful of your favorite granola...or a bucket, that's fine.
- Layer the ingredients in a cup...and eat?
